Used in sauces, marinades, beverages, bakery, dairy and confectionery – citrus fruits are popular due to both their refreshing flavour and classic appeal. Consumers are becoming increasingly interested in authentic ingredients and regional varieties of more well known fruits. The pomelo fruit, also known as ‘shaddock’ has been rising in popularity in the perfumery marketplace – candles, aromatherapy oils and sprays. Native to Southeast Asia, the pomelo is one of the original citrus species, from which the rest of cultivated citrus have developed. With a flavour profile similar to a grapefruit but without the bitter or sour notes, its delicate, almost floral flavour is suited to beverage applications.
